- 1 cup shredded cheddar cheese, divided

Directions:
- Preheat Oven:
- Preheat the oven to 375°F (190°C).
- Grease a baking dish.
- Prepare Potatoes:
- Slice the potatoes thinly, leaving the skins on.
- Make the Cheese Sauce:
- In a saucepan, melt the butter over medium heat.
- Stir in the flour to make a roux, cooking for about 2 minutes until lightly golden.

- Assemble the Dish:
- Layer half of the sliced potatoes in the prepared baking dish.
- Sprinkle half of the bacon and green onions over the potatoes.
- Pour half of the cheese sauce evenly over the top.
- Repeat the layers with the remaining potatoes, bacon, green onions, and cheese sauce.
- Bake:
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil and sprinkle the remaining shredded cheese over the top.
- Return to the oven and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
- Serve:
- Allow the dish to cool slightly before serving.
