Instructions:
For the Dough:
- In a bowl, combine 280 grams of flour, 0.5 tsp of baking powder, a pinch of salt, and 1/4 tsp of vanillin.
- Add 80 grams of butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
- Stir in 200 grams of sour cream and 1 egg yolk. Mix until the dough comes together. It should be soft and pliable.
For the Filling:
- In a separate bowl, beat 1 egg white until foamy.
- Add 40 grams of sugar and 1 tsp of vanilla sugar to the beaten egg white. Mix until well combined.
- Finely chop 100 grams of walnuts and add them to the egg white mixture. Mix until the filling is evenly distributed.
Assembling: - Divide the dough into small portions and roll each portion into a thin rectangle on a floured surface.
- Spread the walnut filling evenly over the rolled-out dough.
- Roll up each portion of dough into a log, sealing the edges.
- Slice the rolls into 1-inch pieces.
- Place the rolls on a baking sheet lined with parchment paper.
