Ingredients:

  • 2 lbs fresh strawberries, hulled and chopped – provides the main fruity base
  • 1 ½ cups granulated sugar – helps preserve the jam and sweetens it
  • 2 tbsp lemon juice – adds acidity, balances sweetness, and helps thicken the jam

Instructions:

  1. Prepare the Strawberries:
    • Rinse, hull, and chop the strawberries. Place them in a large saucepan.
  2. Add Sugar and Lemon Juice:
    • Pour the sugar and lemon juice over the strawberries in the saucepan. Stir to combine and let the mixture sit for about 10–15 minutes to release the juices.
  3. Cook the Jam:
    • Place the saucepan over medium heat. As the mixture heats, mash the strawberries with a potato masher or the back of a spoon until they reach your desired texture.
    • Bring the mixture to a boil, then reduce the heat to low and let it simmer, stirring occasionally, for about 20–25 minutes, or until the jam thickens.
  4. Test for Doneness:
    • To test if the jam is done, place a small spoonful on a cold plate. If it wrinkles slightly when pushed with your finger, it’s ready. If not, continue cooking for a few more minutes and test again.
  5. Jar the Jam:
    • Carefully pour the hot jam into sterilized jars, leaving about ¼ inch at the top. Seal tightly and let it cool completely. Store in the refrigerator for up to 2 weeks, or process in a hot water bath for longer storage.
