Grandma’s Bread and Butter Pickles Recipe
Ingredients
- 4 cups cucumbers, sliced (about 4-5 medium cucumbers)
- 1 cup onions, thinly sliced (about 1 large onion)
- 1 cup granulated sugar
- 1 cup apple cider vinegar
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
- ½ teaspoon ground turmeric
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: 1/2 teaspoon crushed red pepper flakes (for heat)
Instructions
- Prepare the Cucumbers: In a large bowl, combine the sliced cucumbers and onions. Sprinkle with salt, toss to coat, and let them sit for about 1 hour to draw out excess moisture.
- Rinse and Drain: After an hour, rinse the cucumber and onion mixture under cold water to remove excess salt. Drain well and set aside.
- Make the Brine: In a saucepan, combine the sugar, apple cider vinegar, mustard seeds, celery seeds, turmeric, black pepper, and optional crushed red pepper flakes. Bring to a boil over medium heat, stirring until the sugar is dissolved.
- Combine: Add the drained cucumber and onion mixture to the brine. Stir to combine.
- Simmer: Bring the mixture back to a simmer. Let it cook for about 5 minutes, stirring occasionally.
- Pack the Jars: Carefully spoon the hot pickle mixture into sterilized jars, making sure to pack them tightly. Pour the brine over the cucumbers and onions, leaving about ½ inch of headspace.
- Seal the Jars: Wipe the rims of the jars with a clean cloth to remove any residue. Place the lids on the jars and screw on the bands until they are fingertip-tight.
- Cool and Store: Allow the jars to cool to room temperature. Once cooled, store them in the refrigerator. Let the pickles sit for at least 24 hours before enjoying for the best flavor. They can last for several weeks in the fridge.
Importance of Each Ingredient
- Cucumbers: The main ingredient, providing the crunchy texture and base for the pickles. Use fresh, firm cucumbers for the best results.
- Onions: Add sweetness and depth of flavor, complementing the cucumbers.
- Granulated Sugar: Balances the acidity of the vinegar, creating a sweet and tangy flavor profile characteristic of bread and butter pickles.
- Apple Cider Vinegar: Provides the necessary acidity for pickling, contributing to the tartness that enhances the flavor.
- Mustard Seeds & Celery Seeds: Add aromatic flavors and a hint of spice, essential for that classic pickle taste.
- Ground Turmeric: Contributes color and a subtle earthy flavor, enhancing the overall appearance of the pickles.
- Salt: Enhances flavor and helps draw moisture out of the cucumbers during the initial step.
- Black Pepper & Red Pepper Flakes (Optional): Provide warmth and depth, allowing for a slightly spicy kick if desired.
