1 large onion, chopped
1 large bell pepper (any color), chopped
2 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp dried thyme

Directions
- Prepare the Oven and Baking Sheet: Preheat your oven to 400°F (200°C). Place a large baking sheet or a 9x13 inch baking dish in the oven as it preheats. This helps the ingredients to start crisping immediately.
- Cook the Sausage: While the oven heats, cook the crumbled breakfast sausage in a skillet over medium-high heat until it is browned and cooked through. Drain any excess grease and set the sausage aside.
