Basic Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • Additional butter or oil for cooking

Instructions:

  1. Preheat a non-stick skillet or griddle over medium heat.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, whisk together the milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or whisk until just combined. It’s okay if there are a few lumps; overmixing can make the pancakes tough.
  5. Lightly grease the preheated skillet or griddle with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
  7. Flip the pancake with a spatula and cook until the other side is golden brown, about 1-2 minutes more.
  8. Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter.
  9. Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
