Bruschetta with Tomato and Basil

Ingredients

  • For the Topping:
    • 4 ripe tomatoes (Roma or vine-ripened), diced
    • 2 cloves garlic, minced
    • 1/4 cup fresh basil leaves, chopped
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon balsamic vinegar (optional)
    • Salt and pepper to taste
  • For the Bread:
    • 1 French baguette or Italian bread
    • 2 tablespoons extra virgin olive oil
    • 1 clove garlic, halved (for rubbing on the bread)

Instructions

  1. Prepare the Tomato Mixture:
    • In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar (if using).
    • Season with salt and pepper to taste. Set aside to let the flavors meld for about 15-20 minutes.
  2. Prepare the Bread:
    • Preheat your oven to 400°F (200°C).
    • Slice the baguette into 1/2-inch thick slices.
    • Place the slices on a baking sheet and brush one side with olive oil.
    • Bake for about 5-7 minutes or until golden and crispy.
  3. Assemble the Bruschetta:
    • Remove the toasted bread from the oven. While still warm, rub the cut side of the garlic clove on each slice.
    • Spoon the tomato mixture generously onto each slice of toasted bread.
  4. Serve:
    • Drizzle with a little more olive oil if desired and serve immediately.

Tips

  • For extra flavor, you can add a sprinkle of grated Parmesan cheese on top.
  • Use fresh, high-quality ingredients for the best taste.
