Bruschetta with Tomato and Basil
Ingredients
- For the Topping:
- 4 ripe tomatoes (Roma or vine-ripened), diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar (optional)
- Salt and pepper to taste
- For the Bread:
- 1 French baguette or Italian bread
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, halved (for rubbing on the bread)
Instructions
- Prepare the Tomato Mixture:
- In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar (if using).
- Season with salt and pepper to taste. Set aside to let the flavors meld for about 15-20 minutes.
- Prepare the Bread:
- Preheat your oven to 400°F (200°C).
- Slice the baguette into 1/2-inch thick slices.
- Place the slices on a baking sheet and brush one side with olive oil.
- Bake for about 5-7 minutes or until golden and crispy.
- Assemble the Bruschetta:
- Remove the toasted bread from the oven. While still warm, rub the cut side of the garlic clove on each slice.
- Spoon the tomato mixture generously onto each slice of toasted bread.
- Serve:
- Drizzle with a little more olive oil if desired and serve immediately.
Tips
- For extra flavor, you can add a sprinkle of grated Parmesan cheese on top.
