Cheesy Scalloped Potatoes

Ingredients:

  • 2 pounds Yukon Gold potatoes (peeled and thinly sliced)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • Fresh chives or parsley (chopped, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a baking dish with butter or cooking spray.
  2. Prepare the Sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the minced garlic and cook for about 1 minute until fragrant.
    • Sprinkle in the flour, whisking constantly, and cook for 2-3 minutes to form a roux (it should be smooth and golden).
    • Gradually whisk in the milk and heavy cream, stirring constantly until the sauce thickens (about 5-6 minutes).
    • Reduce the heat to low, then add the cheddar cheese and Parmesan cheese. Stir until melted and smooth.
    • Season with salt, pepper, and dried thyme (if using), and set aside.
  3. Layer the Potatoes:
    • Arrange half of the potato slices in an even layer in the prepared baking dish.
    • Pour half of the cheese sauce over the potatoes, spreading it evenly.
    • Layer the remaining potato slices on top, then pour over the rest of the cheese sauce, making sure all potatoes are well-covered.
  4. Bake:
    • Cover the dish with foil and bake for 40 minutes.
    • Remove the foil and bake for an additional 25-30 minutes, or until the top is golden brown and bubbly and the potatoes are tender when pierced with a fork.
  5. Garnish and Serve:
    • Let the scalloped potatoes cool for about 5 minutes, then sprinkle with chopped fresh chives or parsley.
    • Serve hot and enjoy!

Importance of Each Ingredient

  • Yukon Gold Potatoes: These potatoes have a creamy, buttery texture that’s perfect for scalloped dishes, as they hold their shape well while becoming tender and flavorful.
  • Unsalted Butter and Flour (Roux): Together, these form a thickening base for the sauce, giving it a rich, creamy consistency that clings to the potatoes.
  • Garlic: Adds a subtle layer of aromatic flavor that complements the creaminess and cheese in the dish.
  • Whole Milk and Heavy Cream: These create a luxuriously creamy sauce with a balanced thickness that enhances the richness of the potatoes.
  • Sharp Cheddar and Parmesan Cheeses: Cheddar adds a tangy, bold flavor, while Parmesan brings a savory, slightly nutty taste. Together, they create a perfectly gooey, golden topping.
  • Salt, Black Pepper, and Thyme: Seasonings that enhance the dish’s depth of flavor, making each layer taste rich and well-balanced.
  • Chives or Parsley: Adds a fresh, bright garnish that cuts through the richness, while also adding color to the presentation.

Each ingredient in this recipe contributes to the creamy, cheesy, and perfectly baked layers that make scalloped potatoes so delicious and comforting. Enjoy!
