Chicken Bacon Gnocchi Soup

Servings: Serves 6 generous bowls, or 8 for those with smaller appetites.

Ingredients:

  • 1 tablespoon olive oil
  • 4 strips of thick-cut bacon, chopped
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 stalks of celery, diced
  • 3 cloves of garlic, minced
  • 1 pound of chicken breast, cooked and shredded
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 (16-ounce) package of potato gnocchi
  • 3 cups of baby spinach leaves
  • 1 cup of freshly grated Parmesan cheese
  • A sprinkle of love and a handful of good old-fashioned care

Directions:
