Fresh Pasta

Ingredients:

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1-2 tablespoons water (if needed)

Instructions:

  1. Prepare the work surface: Clear a large, clean work surface for kneading and rolling out the dough. You can also use a large mixing bowl if preferred.
  2. Make a well: Pour the flour onto the work surface and create a well in the center.
  3. Add eggs and salt: Crack the eggs into the center of the well and add the salt.
  4. Mix the dough: Using a fork or your fingers, gradually incorporate the flour into the eggs until a dough begins to form. If the dough is too dry, add water, 1 tablespoon at a time, until the dough comes together.
  5. Knead the dough: Once the dough starts to come together, knead it for about 8-10 minutes until it becomes smooth and elastic. If using a stand mixer with a dough hook, knead on medium speed for 6-8 minutes.
  6. Rest the dough: Wrap the dough in plastic wrap or cover it with a damp towel and let it rest at room temperature for at least 30 minutes. This allows the gluten to relax and makes the dough easier to roll out.
  7. Roll out the dough: After resting, divide the dough into smaller portions. Flatten one portion with your hands and dust it lightly with flour. Using a rolling pin or a pasta machine, roll the dough out into thin sheets. If using a machine, gradually decrease the thickness settings until you reach your desired thickness.
  8. Cut the pasta: Once rolled out, you can cut the pasta sheets into your desired shapes—such as fettuccine, tagliatelle, or lasagna sheets.
  9. Cook the pasta: Bring a large pot of salted water to a boil. Cook the fresh pasta for 2-4 minutes, depending on thickness and shape, or until al dente. Fresh pasta cooks much quicker than dried pasta.
  10. Serve: Drain the pasta and toss it immediately with your favorite sauce or toppings.

Fresh pasta has a tender texture and a delicate flavor that pairs beautifully with various sauces, from simple butter and Parmesan to rich tomato or creamy Alfredo. Experiment with different shapes and enjoy the homemade taste!
