Instructions:

- Roll out the dough: After resting, divide the dough into smaller portions. Flatten one portion with your hands and dust it lightly with flour. Using a rolling pin or a pasta machine, roll the dough out into thin sheets. If using a machine, gradually decrease the thickness settings until you reach your desired thickness.
- Cut the pasta: Once rolled out, you can cut the pasta sheets into your desired shapes—such as fettuccine, tagliatelle, or lasagna sheets.
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the fresh pasta for 2-4 minutes, depending on thickness and shape, or until al dente. Fresh pasta cooks much quicker than dried pasta.
- Serve: Drain the pasta and toss it immediately with your favorite sauce or toppings.
