Ingredients:

  • 1 lb (450g) ground beef – Provides the rich, hearty base for the meatloaf.
  • 1/2 lb (225g) ground pork – Adds tenderness and extra flavor.

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Prepare the Meat Mixture:

    • Add the chopped onion, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, thyme, and garlic powder.

  3. Shape the Meatloaf:
    • Transfer the meat mixture into the prepared loaf pan or shape it into a loaf on a baking sheet.
  4. Make the Glaze:
    • In a small bowl, combine the ketchup, brown sugar, and mustard. Stir well until smooth.
    • Spread half of this glaze over the top of the meatloaf, reserving the rest for later.
  5. Bake:
    • Place the meatloaf in the oven and bake for 45 minutes. After this time, remove it from the oven, spread the remaining glaze over the top, and bake for another 15 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve:
    • Let the meatloaf rest for about 10 minutes before slicing. Serve with mashed potatoes or steamed vegetables for a complete meal.
