Mississippi Mud Potatoes

Ingredients:

  • 6 large potatoes, washed and scrubbed
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Directions:

  1. Preheat Oven:
    • Preheat the oven to 375°F (190°C).
    • Grease a baking dish.
  2. Prepare Potatoes:
    • Slice the potatoes thinly, leaving the skins on.
  3. Make the Cheese Sauce:
    • In a saucepan, melt the butter over medium heat.
    • Stir in the flour to make a roux, cooking for about 2 minutes until lightly golden.
    • Gradually whisk in the milk, stirring constantly until the mixture thickens.
    • Remove from heat and stir in half of the shredded cheese until melted.
    • Season the cheese sauce with salt and pepper to taste.
  4. Assemble the Dish:
    • Layer half of the sliced potatoes in the prepared baking dish.
    • Sprinkle half of the bacon and green onions over the potatoes.
    • Pour half of the cheese sauce evenly over the top.
    • Repeat the layers with the remaining potatoes, bacon, green onions, and cheese sauce.
  5. Bake:
    • Cover the baking dish with foil and bake for 45 minutes.
    • Remove the foil and sprinkle the remaining shredded cheese over the top.
    • Return to the oven and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  6. Serve:
    • Allow the dish to cool slightly before serving.
