Ingredients

  • For the Cauliflower Bites:

    • 1 teaspoon garlic powder

  • For the Buffalo Sauce:
    • 1/2 cup hot sauce (like Frank’s RedHot)
    • 1/4 cup unsalted butter, melted
    • 1 tablespoon honey or maple syrup (optional for sweetness)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Prepare the Batter:
    • In a large bowl, whisk together the flour, water, garlic powder, onion powder, salt, pepper, and paprika until smooth.
  3. Coat the Cauliflower:
    • Dip each cauliflower floret into the batter, allowing the excess to drip off, and place them on the prepared baking sheet.
  4. Bake:
    • Bake the cauliflower in the preheated oven for about 20 minutes, or until they start to become golden and crispy.
  5. Make the Buffalo Sauce:
    • While the cauliflower is baking, combine the hot sauce, melted butter, and honey/maple syrup in a small bowl. Mix well.
  6. Coat with Sauce:
    • After 20 minutes, remove the cauliflower from the oven and drizzle the buffalo sauce over them. Toss gently to coat.
  7. Bake Again:
    • Return the cauliflower to the oven and bake for an additional 10-15 minutes, until crispy and well-coated with sauce.
  8. Serve:
    • Remove from the oven and let cool slightly. Serve with celery sticks and ranch or blue cheese dressing for dipping.
