Ingredients

For the cake:

2 tablespoons of ground flax seeds + 6 tablespoons

1 cup of granulated sugar

1 2⁄3 + 1 tablespoon all-purpose flour

1 tablespoon of cocoa powder

11⁄2 teaspoons of baking powder

1 teaspoon of baking soda

1⁄2 teaspoon of salt

1⁄4 cup vegan butter, at room temperature

1⁄3 cup non-dairy yogurt

1⁄4 cup vegetable oil

1 tablespoon of vanilla extract

2⁄3 cup non-dairy milk

1 vegan chocolate chip cup

1-2 tablespoons of red food coloring (for the desired color)

For the icing:

1 cup of shortening

1 cup of vegan butter

4 cups of powdered sugar

1 tablespoon of vanilla bean paste or vanilla extract

1-2 tablespoons of non-dairy milk (as needed)

A pinch of salt

Red food coloring (for ombre effect)

To decorate:

Dark Chocolate Chip

Non-dairy milk (for ganache)

Instructions

1. Make the cake:

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 6-inch round cake pans.

Prepare the flax seed mixture: In a small bowl, whisk together the ground flax seeds and the water. Set aside to gain weight.

Mix dry ingredients: In a bowl of a stand mixer, combine 1 2⁄3 cup flour, cocoa powder, baking powder, baking soda, salt and granulated sugar.

Add the vegan butter: Add the vegan butter and beat on low until the mixture resembles a sandy texture.

Combine wet ingredients: in a separate bowl, whisk together vegetable oil, flaxseed mix, non-dairy yogurt and vanilla extract. Add this mixture to the dry ingredients and mix until combined.

Add milk and food coloring: pour non-dairy milk and beat on medium-low until smooth and creamy. Add red food coloring until you reach the chocolate. Gently fold the chocolate chips.

Cooking: Divide the dough evenly between the prepared pans. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely

2. Make the icing:

Cream Shortening and Vegan Butter: In the bowl of a stand mixer, beat the shortening and vegan butter until smooth.

Add powdered sugar: Add powdered sugar gradually, 1 cup at a time, until icing is thick and creamy. Add batter or vanilla extract, salt and 1-2 tablespoons of non-dairy milk to achieve desired consistency.

Prepare the red glaze: Transfer about 1⁄4 of the glaze to a separate bowl and mix in the red food coloring until it reaches the shade.

3. Assemble the cake:

Layer Cake: Divide each cake layer in half to create 4 thin layers.

Frosting in between layers: place a layer on your cake stand or tray. Spread a layer of white icing on top, then repeat with remaining layers.

Crumb Coat: Apply a thin layer of white icing to the entire cake to seal the crumb. Smooth with a bench scraper and relax for 15-20 minutes.

4. Final icing and ganache:

Apply the final icing: frost the bottom 1⁄4-1/3 of the cake with red icing and the rest with white icing. Use an offset spatula to blend colors for an ombre effect. Smooth with a bench scraper.

Prepare the ganache: In a microwave-safe bowl, combine dark chocolate chips with a touch of non-dairy milk. Microwave at 20 second intervals until smooth, adding more milk if needed to achieve desired consistency.

Decorate with ganache: Transfer the ganache into a squeezed bottle and drizzle over the cake. Relax to put on.

5. Decorate & Serve:

Piping: Use extra icing to pipe decorative swirls on top of the cake with a 1M tip. Add some sprinkles for a finishing touch.

Serve: Let cake cook a few minutes before slicing and serving.
